ধরুন, আপনার নিকটাত্বীয় ব্যবসার কাজে প্রায়ই ইউরোপ-আমেরিকা ঘুরে বেড়ান। আর প্রতিবারই লাগেজ ভর্তি করে চকলেট আনেন, আর সবাইকে উপহার দেন। দেশে যেসব চকলেট পাওয়া যায় তাতে আসল চকলেটের স্বাদ নেই। তাই পরিবারের সবাই অপেক্ষায় থাকে বিদেশী চকলেটের। কিন্তু এমন যদি হয়, ইউরোপ-আমেরিকা ঘুরেও কোন চকলেট খুঁজে পাওয়া যাচ্ছে না? তাহলে কী হবে?
হয়তো আগামী ৪০ বছর পর এই সময়টা আসবে। যখন দোকানে দোকানে ঘুরেও চকলেট পাওয়া যাবেনা। যে কয়েকটা পাওয়া যাবে, তার দামও হবে চিন্তার বাইরে। সোনা ও হীরার মত দামী হবে এটা মোটামুটি নিশ্চিত। কথাগুলো শুনে কি অবাক হচ্ছেন? ভাবছেন আমি এমনি এমনি এসব বলছি?
কথাটা আমার না, গবেষণকদের অনুমান। যে চকলেট শিশুদের কান্না থামাতে কিংবা বার্থ ডে-সহ যেকোন বিশেষ দিবেসের গিফট হিসেবে বেস্ট অপশন, সেই অপশন কি তাহলে আর থাকছে না?
প্রশ্ন হল, আজ থেকে ৪০ বছর পর কেন বিলুপ্ত হবে চকলেট?
উত্তরে যাবার আগে চলুন, চকলেট এলো কীভাবে – সেই গল্পটা জেনে আসি।

চকলেট আধুনিক যুগের কোন খাবার নয়। মায়ান সভ্যতার ইতিহাস নিয়ে তৈরি আমাদের ভিডিও থেকেই আপনারা জেনেছেন, হাজার বছর পুরনো মায়ানদের মধ্যেও চকলেটের চল ছিল। সত্যি বলতে, চকলেট এসেছে তারও আগে প্রাচীন ওলমেক সভ্যতা থেকে। যুক্তরাষ্ট্রের স্মিথসোনিয়ান ন্যাশনাল মিউজিয়ামের ম্যানজোর হায়েস লেভিসের মতে, ওলমেকরা নৌকায় করে কোকোয়া ফল নিয়ে আসতেন। সেই ফলের বীজ থেকে তৈরি হতো চকলেট। কোকোয়া বীজকে ওলমেকরা বলতো ‘কাকাওয়া’, যার মানে ‘ঈশ্বরের খাবার’। বুঝতেই পারছেন, ওলমেকরা চকলেটকে পবিত্র খাবার মনে করতো। মায়ানরা চকলেট পেয়েছে দক্ষিণ-পূর্ব মেক্সিকোর ওলমেক সভ্যতা থেকে, তা একরকম নিশ্চিতই। একে একটি সম্মানজনক খাবার মনে করতো মায়ানরা। সেসময় বিভিন্ন গুরুত্বপূর্ণ সভায় চকলেটের পানীয় পরিবেশন করা হতো।
তবে চকলেট শুনলেই আমাদের মনে যে ক্যান্ডি বারের ছবি ভেসে উঠে, প্রাচীনকালে তা মোটেও এমন ছিল না। সেসময় চকলেট ছিল তরল এবং কিছুটা তেতো স্বাদের। বর্তমান মিষ্টি চকলেটের শুরুটা উনবিংশ শতাব্দীতে। তখনই জানা যায় চকলেটের ঔষধি গুণ সম্পর্কে। সেসময় এক ফরাসি ফার্মাসিস্ট চকলেট মেশানো ঔষধ তৈরির কারখানাও গড়ে তুলেছিলেন। যদিও শেষ পর্যন্ত টেকেনি সে কারখানা। পরে মাল্টিন্যাশনাল নেসলে কোম্পানি হাতে যায় কারখানাটির মালিকানা।
গত ৫০ বছরে চকলেটের ভালো-খারাপ দিক নিয়ে বিস্তর গবেষণা হয়েছে। কিছু গবেষণায় দেখা গেছে, মানসিক চাপে থাকলে মানুষ চকলেট বেশি খায়। আবার কিছু বলছে, চকলেটে থাকা ক্যাটেকিনস নামের অ্যান্টি-অক্সিডেন্ট ক্যান্সার ঠেকায় এবং ব্রেনের কর্ম ক্ষমতা বাড়ায়।
গিফ্ট হিসেবে চকলেট সবসময় ট্রেন্ডি একটি ব্যাপার। সে কারণে চকলেটের চাহিদা কখনো কমেনি বরং উল্টো বেড়েছে। চকলেট নিয়ে আমেরিকানদের মাতামাতি দেখে অনেকের ধারণা, চকলেটের এই বিশাল বাজার তাদের কারণেই। কিন্তু ওয়ার্ল্ড পপুলেশন রিভিউ বলছে ভিন্ন কথা। তাদের গবেষণা বলছে, সবচেয়ে বেশি চকলেট পাগল সুইজারল্যান্ডের মানুষ। বছরে গড়ে প্রায় ৯ কেজি চকলেট খায় সুইসরা। কাছাকাছি আছে জার্মান ও অস্ট্রিয়ানরা। গড় আমেরিকানদের চকলেট খাওয়ার পরিমাণ প্রায় সাড়ে ৫ কেজি। সবচেয়ে কম চকলেট খায় চাইনিজরা, বছরে ১০০ গ্রামেরও কম।
মজার ব্যাপার হল, যে চকলেট বেঁচে ইউরোপ আঙুল ফুলে কলা গাছ বনে গেছে সেই ইউরোপের কোথাও চকলেটের মূল উপাদান কোকোয়া গাছ হয়না। পশ্চিম আফ্রিকার দেশ ঘানা ও আইভরি কোস্টেই জন্মে এই গাছ। শুধু কি তাই, বিশ্বের ৬০ থেকে ৭০ ভাগ চকলেটের মূল উপকরণ আসে এই দুই দেশ থেকে। এতো এতো উৎপাদন করার পরও সেখানকার কৃষকদের অবস্থা নাজুক। বিশ্বে চকলেটের বাজার ১৪০ বিলিয়ন ডলার হলেও, এর মাত্র ৫ থেকে সর্বোচ্চ ৬ শতাংশ পায় আফ্রিকান কৃষকেরা। তবে এখন ভারতসহ ল্যাটিন আমেরিকার কিছু দেশে অল্প পরিমাণ কোকো চাষ হচ্ছে। মাথায় নিশ্চয়ই ঘুরপাক খাচ্ছে, এতো পরিমাণ চকলেট উৎপাদিত হলে বিলুপ্তির কথা কেন বলছি?
উত্তরটা হলো, অতিমাত্রার গরমের জন্য। চকলেট মুল উপাদান, কোকোয়া গাছ খুবই সেনসেটিভ হওয়াতে, কেবল অনুকূল আবহাওয়াতেই এর চাষ করা যায়। সাধারণত ২০ ডিগ্রি সেলসিয়াস তাপমাত্রা কোকোয়া চাষের জন্য উপযুক্ত। সাথে প্রয়োজন প্রচুর বৃষ্টিপাত। কিন্তু গত কয়েক বছর ধরে তাপমাত্রা বৃদ্ধি ও অনাবৃষ্টির কারণে কোকোয়া চাষ অনেকটাই ক্ষতিগ্রস্ত হয়েছে এবং এখনও হচ্ছে। পাশাপাশি বৈশ্বিক উষ্ণতার ফলে উত্তর মেরুর বরফ গলে, পানির উচ্চতা বাড়ছে উপকূলীয় অঞ্চলগুলোতে। যেহেতু সমুদ্র তীরবর্তী অঞ্চলেই কোকোয়া চাষ সবচেয়ে বেশি হয়, তাই সাগরের পানির উচ্চতা বাড়ার ফলে আবাদি জমির পরিমাণ কমে আসছে। ব্যাহত হচ্ছে কোকোয়ার উৎপাদন।
গবেষকদের দাবি, বৈশ্বিক গড় তাপমাত্রা যদি আরও ২.১ ডিগ্রি সেলসিয়াস বেড়ে যায়, সেক্ষেত্রে কোকোয়া চাষ একরকম অসম্ভব হয়ে পড়বে।
তাছাড়া শোলেন শুট নামে একধরনের রোগ ছড়িয়ে পড়ছে কোকোয়া গাছে। এই রোগ হলে গাছ শুকিয়ে মারা যায়। বিগত তিন বছরের বেশি সময় ধরে আইভরি কোস্টের ১৩টি কোকোয়া গ্রোয়িং এরিয়ার মধ্যে ১১টিতেই এই রোগ ছড়িয়ে পড়েছে। মোটা দাগে, এসব কারণে আইভরি কোস্টে চকলেটের উৎপাদন কমেছে ২০-২৫ ভাগ আর ঘানার উৎপাদন কমেছে ৩৫ ভাগ। যোগান কমে যাওয়ায় কোকোয়া বিনের দামও এক বছরের দ্বিগুণ হয়েছে।
এসব বিষয় বিবেচনায় রেখে আমেরিকান পরিবেশবিদদের আশঙ্কা, ২০৫০ সাল নাগাদ পশ্চিম আফ্রিকার দেশগুলোর তাপমাত্রা ২.১ ডিগ্রি সেলসিয়াস বেড়ে যাবে। তাহলে কি ২০৫০ সালে পৃথিবী থেকে বিলুপ্ত হবে চকলেট?
বাংলাদেশের কথা যদি, তাহলে এখানে বেশিরভাগ চকলেট আসে ভারত থেকে। কিন্তু এই চকলেটের দামের সাথে গুণগত মানের তফাৎ নিয়ে আমরা কেউ ভাবি না। আর আমাদের দেশের চকলেট মানেই তো সুগার বার। যেখানে চকলেটের ছিটে ফোটাও থাকেনা।
সহজে যদি বুঝিয়ে বলি, বাংলাদেশে তৈরি চকলেটে কোকো সলিড থাকে মাত্র ১০ থেকে সর্বোচ্চ ২০ ভাগ। চিনি থাকে ৫০ থেকে ৬০ ভাগ। আর বিদেশী চকলেটে কোকো সলিডই থাকে ৫০ থেকে সর্বোচ্চ ৯০ ভাগ। চিনি থাকে মাত্র ১০ থেকে সর্বোচ্চ ৩০ ভাগ। এখন আপনারাই বলেন, মানুষ কেন দেশীয় চকলেট খাবে? গণমাধ্যমে এই রিপোর্টটি দেখুন, এখানে তো স্পষ্ট বলা হচ্ছে চকলেটের মার্কেটের ৬০ ভাগ নিয়ন্ত্রণ করছে বিদেশী ব্রান্ডগুলো। এক্ষেত্রে আমরাও নিরূপায়। সেজন্যইতো আত্মীয়-স্বজন বিদেশে বেড়াতে গেলে চকলেট নিয়ে আসার আবদার করি।
সাধারণত প্রতিটি কোকোয়া ফলে প্রায় ৩০টির মতো বীজ থাকে। ফল পাকলে জাতভেদে ফলের রং লাল কিংবা গাঢ় হলুদ হয়। পাকার পর বীজ বের করে শুকিয়ে গুড়া করতে হয়। সাধারণত কোকোয়া বীজ থেকে প্রাপ্ত কোকো বিনের গুড়া এবং বাটার থেকে চকলেট তৈরি হয়। ডার্ক চকলেটে ৫০ থেকে ৯০ ভাগ পর্যন্ত কোকো বিন পাউডার ব্যবহার করা হয়। তার সাথে থাকে লেসিথিন নামের ক্যামিকেল আর চিনি। অন্যদিকে মিল্ক চকলেটে কোকো বিন থাকে ৩০ থেকে ৫০ পার্সেন্ট। বাকি উপাদানের মধ্যে কোকোয়া বাটার, চিনি, দুধ এবং ফ্লেভার মেশানো হয়।
কিন্তু বর্তমানে কোকোয়া বীজের উৎপাদন কমছে, আর বাড়ছে চাহিদা। সবমিলিয়ে সাধারণ মানুষের হাতের নাগালের বাইরে চলে যাচ্ছে চকলেটের দাম। মোদ্দা কথা হচ্ছে, চকলেট বিলুপ্ত হওয়ার প্রসেস ইতোমধ্যেই শুরু হয়ে গেছে। এখনই অরিজিনাল চকলেটের দাম সাধারণ মানুষের হাতের নাগালের বাইরে। তার ওপর বৈশ্বিক উষ্ণতা যে হারে বাড়ছে তাতে আগামী কয়েকবছর পর চকলেটে থাকবে কিনা তা নিয়েও যথেষ্ট সন্দেহ আছে। তখন হয়তো শুধু কোটিপতিরাই শখ করে স্বর্ণের দামে চকলেট কিনে খাবে।
তাহলে সমাধান কী? সমাধান হলো – পরিবেশের ভারসাম্য রক্ষার জন্য বেশি বেশি গাছ লাগান, তা নাহলে চকলেটের মতো আরো কত চমৎকার জিনিস যে আমরা হারিয়ে ফেলবো, তার কোন হিসেব থাকবে না। আর জলবায়ুর এমন পরিবর্তন অব্যাহত থাকলে পৃথিবীও হয়ে পড়বে বসবাসের অযোগ্য। আমরা কি ভবিষ্যৎ প্রজন্মের জন্য তেমন একটি পৃথিবী রেখে যাবো? আসুন, সকল উদ্ভিদ ও প্রাণীর জন্য আবাসযোগ্য একটি পৃথিবী গড়তে আমরা সবাই এগিয়ে আসি।
